Apricot - Honey - Cinnamon Stick

This lot is a collection of coffees from 3 smallholder farms near Los Tigres, Peru. The farms grow Yellow Caturra, Bourbon, Pache and Typica varietals at around 1900 meters above sea level. As per most coffees we purchase - the farmers that contribute to this lot are very careful about their growing and sorting processes. Coffees are nurtured constantly during the growth season and meticulously picked, processed and sorted for ripeness and uniformity. Coffees are pulped (separated from their cherries) on the same day as picking, then left to ferment in a large tank for around 30 hours. Regular washing and drying occurs after this.

This coffee is super sweet and jammy, dried apricots and peach dominate the cup at first sip. As the coffee cools it leans more into a spiced & earthy profile. Cinnamon stick, allspice and fresh clove are what we taste in the finish, and it's all rounded out by a nice sweet honey flavor.
