Sitting just outside of Guatemala City, Finca El Tambor is owned by Victor Calderon (the 5th generation of a coffee farming family). He purchased the farm in 2001 as an effort to shift his family run coffee business out of the dwindling Robusta market and into the higher paying Arabica production. El Tambor has a unique history of battling roya (leaf rust, a serious problem in the industry) via natural methods rather than chemicals. When confronted with the issue early in Victor's ownership of the farm, he experimented with a number of acidic compounds until he found something sustainable that would control the issue -- volcanic clay. Each generation of coffee shrub grows in stronger than the prior and ultimately Victor has created a super low environmental impact solution to one of the biggest hurdles in the coffee growing world.

This years lot of 100% bourbon is fully washed and sundried. The profile is clean and sweet, some complex fruit notes lie underneath a very classic range of flavors. Cocoa and almond are the structure and notes like peach jam & fresh pineapple come through as the cup cools.
