Finca Veracruz sits inside Santa Barbara Estate which is owned by the Echavarria Family. Veracruz itself is near the town of Amaga and sits at an average of 1650 meters above sea level. Each lot from Veracruz is comprised of 5 days worth of picked cherries and is meticulously processed via a unique ‘extended fermentation’ (basically just a longer fermentation on a washed process). As such this coffee highlights fruited flavors reminiscent of a honey processed coffee, although the overall profile is more similar to a fully washed.

This is our third year buying from Finca Veracruz, this lot in particular is more on the super peachy side of the spectrum - it basically tastes like those peach gummy rings with a malty finish. Dense brown sugar sweetness emerges as the coffee cools and the finish is long and super sweet.
